Baking soda is pure sodium bicarbonate, and unlike baking powder it arrives with no acid attached. It sits inert until it meets one — buttermilk, yogurt, brown sugar, molasses, cocoa, lemon juice, vinegar — and then it releases carbon dioxide and lifts whatever it is in.

But the gas is only half of the job, and the half people forget is alkalinity. Baking soda raises the pH of a dough, and a more alkaline dough browns faster and further. That is why a cookie recipe with soda in it spreads wider and comes out darker and chewier than the same recipe leavened with powder, and why pretzels and some pancake recipes lean on it for colour as much as for rise.

This matters enormously when you substitute, because most alternatives replace the gas and not the alkalinity. Swap the leavening and the thing will still rise. It may also come out paler, thicker, and less caramelised than the recipe intended — not a failure exactly, but a different biscuit from the one on the page. Baking powder is mostly filler and pre-mixed acid, so you need three times as much to get the same amount of gas. The second half of the note is the part that catches people out — omit or reduce the acidic ingredients, like buttermilk. Baking powder brings its own acid, so if you leave a cup of buttermilk in the recipe, you now have surplus acid with nothing to react with and a sour edge in the finished crumb.

The next tier is not really substitution at all but rebalancing. Buttermilk at 5.0, plain yogurt, kefir and whey all work by replacing part of the recipe's liquid with something acidic and then adding baking powder alongside — the acid keeps the leavening lively and, more usefully, keeps some of the tenderising and tang that the original soda-plus-acid pairing was producing. Lemon juice and vinegar do the same for a small amount of liquid, in a recipe that has no room for half a cup of buttermilk.

Cream of tartar at 5.0 comes at the problem from the other end. Its note gives the assembly ratio directly: 1 tsp of baking soda with 1.5 tsp of cream of tartar makes the equivalent of 2.5 tsp of baking powder. It is the entry to read when what you actually have is soda and cream of tartar and what you need is powder.
